Ingredients

For the Soup

  • 1 whole chicken (3-4 lbs)
  • 3 large carrots, chopped
  • 3 celery stalks, chopped
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tbsp fresh thyme
  • 1 tbsp fresh parsley
  • 8 cups water
  • 2 cups chicken broth
  • Salt and pepper to taste

For Serving

  • 2 cups egg noodles
  • Fresh dill
  • Lemon wedges
  • Crusty bread

Instructions

  1. Prepare Ingredients:

    Clean the chicken and chop all vegetables. Place chicken in a large pot.

  2. Make the Base:

    Add vegetables, herbs, water, and broth to the pot. Bring to a boil, then reduce heat.

  3. Simmer:

    Cover and simmer for 1 hour or until chicken is tender and falling off the bone.

  4. Prepare Chicken:

    Remove chicken, let cool slightly. Remove meat from bones and shred.

  5. Finish Soup:

    Return shredded chicken to pot, add noodles, cook until tender. Season with salt and pepper.
