Ingredients

For the Salad:

  • 4 large tomatoes, cut into wedges
  • 1 English cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 green bell pepper, chopped
  • 200g Kalamata olives
  • 200g Feta cheese, cubed

For the Dressing:

  • ¼ cup extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 clove garlic, minced (optional)

Instructions

  1. Prepare the Vegetables:

    Cut tomatoes into wedges, slice cucumber into half-moons, thinly slice red onion, and chop bell pepper into chunks.

  2. Make the Dressing:

    In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, pepper, and minced garlic if using.

  3. Combine:

    In a large bowl, combine tomatoes, cucumber, red onion, and bell pepper. Add Kalamata olives.

  4. Add Dressing:

    Pour the dressing over the vegetables and toss gently to combine.

  5. Finish:

    Top with cubed feta cheese and a sprinkle of additional oregano if desired. Serve immediately.
