Ingredients

For the Kebab

  • 2 lbs lamb shoulder, cubed
  • 2 onions, grated
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 tbsp red pepper paste
  • 1 tbsp ground cumin
  • 1 tbsp paprika
  • 1 tsp black pepper
  • 1 tsp salt

For Serving

  • 6 pita breads
  • 1 red onion, sliced
  • Fresh parsley
  • Lemon wedges
  • Sumac for garnish

Instructions

  1. Prepare Marinade:

    Mix grated onion, garlic, olive oil, tomato paste, red pepper paste, and all spices in a bowl.

  2. Marinate Meat:

    Add cubed lamb to the marinade, mix well. Cover and refrigerate for 4-24 hours.

  3. Prepare Skewers:

    Thread marinated meat onto metal skewers, leaving space between pieces.

  4. Grill:

    Preheat grill to high heat. Grill kebabs for 12-15 minutes, turning occasionally.

  5. Serve:

    Remove from skewers, serve with pita, onions, parsley, and lemon. Sprinkle with sumac.
